Spicy fish on the Lebanese way

- 1 1/2 kg sea bass or lot, cleaned 4 tbsp olive oil 1 onion, finely chopped 2 tablespoons crushed garlic + pomegranate molasses 1 each red, yellow and orange peppers, finely chopped 1 red chili, finely chopped 1 kg tomatoes, finely chopped 1 kg fresh coriander-finely chopped 1 tablespoon each of roasted pine nuts and coarsely chopped pistachios
How it works:
- In a wide pan, sauté onions and garlic in a tablespoon of oil until tender, then add pomegranate molasses, peppers and tomatoes and cook for 8 minutes, then remove the sauce from the heat and add coriander and marinate.
- Heat the oven tray (on the size of the fish) on strong heat and then add the rest of the oil and when heated add the fish and roast a little on both sides for a minute and then season well from the outside and inside. Cover the fish with sauce completely and bake in a hot oven for 12-15 minutes in the middle rack. The knife is ready if we can insert a sharp knife into the center of the fish and remove it easily. It is preferable not to leave the fish too much in the oven so as not to dry out.
Transfer to a serving dish and beautify with pine nuts and pistachios.
