Ingredients:

Couscous with vegetables

Gravy:

* 1 kg lamb
* 2 onions
♦ Oil cup
* A teaspoon of black pepper
* A teaspoon ginger (Skengeber)
* A pinch of crushed hot saffron
* 2.5 liters of water
* 250 g green pumpkin
* 250 carrots
* 2 Tomatoes
* 400 g red pumpkin
* Bunch of parsley
* Tablespoon margarine

Couscous:

* A kilo but a quarter of couscous (prepared as mentioned in the recipe for the preparation of couscous)
How to prepare couscous with vegetables:

  • In a cooker, put the meat section and add the chopped onion and oil, let everyone fry until the onion becomes transparent n add water and spices, cover the pot and let the meat cook on moderate heat for about half an hour (depending on the quality of the meat used)
  • Wash the pumpkin and remove the head and the back, drag the carrots, divide from half and remove his heart, peel the turnip and then divide into half and add all to the broth with a bunch of parsley, leave all on moderate heat, until the vegetables are cooked.
  • Peel the red pumpkin, wash the tomatoes and remove the head and then add to the pot in half the stage of cooking vegetables (carrots, turnips and pumpkins)
  • When the vegetables are cooked, remove the cooker from the heat and add the local ghee to the broth
  • In a serving dish, put couscous hot in the form of a pyramid, hollow in the middle, put the meat and garnish with vegetables, then put the broth over it.
