One serving of soy milk

In a large bowl, thoroughly combine all of the dry ingredients.
The soy yogurt and oil should be incorporated next, and the mixture should be beaten until it is smooth.
Put about a quarter cup of dough at a time onto a hot griddle or floured cooking pan. Flip the crepe after about 2 minutes of cooking on the first side, or until peaks appear. A decent crepe needs about 5 minutes of heating time.
Pikelets can be made by pouring batter into a skillet of a hockey puck’s dimensions. The cooking time for each side shouldn’t exceed a minute.
Additional Suggestions:
You can substitute honey, maple syrup, or agave nectar for the sugar. Honey is inherently fragrant and may be consumed by vegetarians, though this is not the case for everyone. Another natural sugar that sees widespread culinary use is agave nectar.

This dish can be made just as well with nut or rice milk if you’re allergic to soy. Pancakes made with coconut milk will have a distinct coconut flavor. It’s not a nuanced argument at all.
Hemp milk can be substituted for regular milk if you’re looking for a high-protein morning beverage. In most cases, hemp milk contains significantly more protein than protein-enhanced soy milk. However, there may be a slight bitter aftertaste. If you’re unfamiliar with hemp milk, I wouldn’t suggest this.
To make a gluten-free crepe, simply replace the regular flour with gluten-free flour (ideally, organic flour).
